She had a nine-year-old Cavalier King Charles Spaniel, thirty-one pounds and a little soft around the middle, and two bags on her counter — one freeze-dried, one from the fresh-food cooler. She wasn’t asking me which was “healthier” in the abstract. She wanted to know what actually happens to a nugget of freeze-dried salmon versus a spoonful of gently cooked chicken and rice once it hits her dog’s gut, and whether the answer should change now that his stool had gone soft twice in a month. That is the right question. It is a mechanism question, not a marketing question, and it deserves a mechanism answer.
Two different roads to the same starting point
Freeze-dried dog food and fresh dog food usually begin as the same thing: raw or minimally processed meat, organ, and produce. From there, the paths split. Freeze-drying pulls nearly all the moisture out of the food under vacuum at low temperature, which is gentler on heat-sensitive nutrients than extrusion or retort canning but still changes the food’s physical structure — the ice crystals that form during freezing leave behind a porous, sponge-like matrix once the water sublimates away. Fresh food, by contrast, is typically cooked at low-to-moderate temperatures and kept refrigerated or frozen, retaining its original water content and texture. What the drying process does to the gut’s workload

Its drawback is that the rehydration step is a real variable, not a footnote, and dogs recovering from GI upset or managing a chronic condition like EPI may do better with a format that removes that variable altogether.
Fiber source is one place both formats can support a settling gut without much complexity. Pumpkin is a common addition across both freeze-dried and fresh commercial diets, and for good reason: pumpkin fiber is a gentle, natural source of both soluble and insoluble fiber, which can help firm stool during a transition period without the harshness of a more aggressive fiber supplement. It’s a small lever, but it’s one worth knowing about if your dog’s stool is on the softer side during any diet change, freeze-dried, fresh, or otherwise.

As you go through any transition, keep an eye on what else is on the counter. Fresh-food prep often means more produce within a dog’s reach, and it’s worth a reminder that not everything humans snack on is safe — grapes are toxic to dogs in amounts too small to predict reliably, and the same goes for onions, which can damage red blood cells even in small, repeated doses.
